No, unfortunately we don’t. Many ceramic knives are difficult to make sharper than they were on day 1, unlike steel knives which we have always specialized in.
No, unfortunately not right now. This wouldn't be possible due to the size of our envelopes. Knives that are commonly found in kitchens will always be less than 16" however.

Yes. Using a properly sharpened knife makes cooking really, really fun! It actually makes your food taste a lot better, as reported by the NY Times. A sharp blade is also much safer to use. Dull blades require more pressure and don't cut cleanly, which can lead to accidents in the kitchen. Like most things in life, using something a lot means wearing it out, and knife blades easily become dull and no longer perform like a sharp knife should.
Not at all! Cheap knives are actually often made of quality steel, but they were sharpened by machine and not by hand and therefore cost less to make. As an example, some of IKEA's series of knives were manufactured in the same factory as high-end knives that retail at $100+, and they are even made from the very same steel! In other words, any knife has tons of potential – but you have to know how to bring it out.
Many of our customers own a sharpening steel or stone. They are good for straightening wavy, dulling edges but won't actually sharpen the knife! When an edge is worn down it can no longer be sharpened. Instead, it takes on a U-shape (instead of looking like a 'V') and a new cutting edge is required. Most people can make a knife sharper, but to sharpen a knife correctly takes time, skill, and plenty of practice. You are guaranteed to feel the difference.
For many everyday kitchen knives, a proper (professional) sharpening every 6-12 months is enough. It all comes down to how often you use yours, and how you care for them between professional sharpening treatments. If you can't glide your knife smoothly through a sheet of standard printer paper, it's already waiting to be sharpened thoroughly.
